Mini Apple Crumble Ramekins, the perfect winter warmer!
for 6 servings
50g unsalted butter
1kg apples, peeled, cored, cut into 1cm slices
185g caster sugar
1/2 tsp ground cinnamon
300g shortbread biscuits
Preheat oven to 180°C. Melt 20g of the butter in a pan over heat. Cook apple, sugar and cinnamon, stirring, for 5-6 minutes until soft. Transfer to six ramekins.
Pulse shortbread in a processor to form coarse crumbs. Add remaining butter and process to combine. Top ramekins with crumbs. Bake for 35 minutes until golden.
