BAKED SHAKSHUKA

Traditional Middle Eastern Baked Egg Shakshuka

INGREDIENTS

for 4 servings
1 red onion, sliced
3 garlic cloves, crushed
1 red capsicum, sliced
1 red chilli, sliced
1/4 tsp caster sugar
2 x 400g cans Diced Tomatoes
2 tsp sweet paprika
4 eggs
2 tsp ground cumin
1/2 tsp coriander
1 tsp chilli flakes

PREPARATION

Cook onion until soft. Stir in capsicum, garlic and fresh chilli until soft. Stir in paprika, cumin, ground coriander, dried chilli flakes and sugar for 1 minute.

Add the tomatoes. Cook, stirring often until mixture is a thick consistency. Remove from heat. Make 4 evenly spaced indents in the mixture. Crack an egg into each indent.

Cover and cook yolks until cooked to your liking.
