Try this easy and healthy carrot pilaf recipe for a quick weekday dinner.
for 4 servings
2 tbsp olive oil
500g carrots, halved, thinly sliced
2 tsp mild curry powder
500ml (2 cups) Vegetable stock
420g green peas, rinsed
Sliced green onion, to serve
1 small diced potato
Green Chilli (Optional)
1 Cup Basmati Rice, uncooked, rinsed
Heat oil in a large frying pan on high. Cook carrot, potato, peas for 3-4 mins or until starting to soften. Add curry powder and stir for 1 min.
Add rice, stirring for 1 minute. Add vegetable stock and bring it to a boil. Cover and simmer on low for 15 mins.
Serve garnished with green onion.
