CHAR-GRILLED PEACH SALAD WITH FETTA
Light and sweet Peach Salad
for 4 servings
1/3 cup Basil
3 tablespoons Lemon juice
1/4 cup Olive oil
Salt and Pepper, to taste
4 Yellow peaches, cut in quarters
To make dressing combine basil, lemon juice, olive oil, salt and pepper; mix until combined.
Heat a grill pan or barbeque to medium heat.
Brush the sliced peaches with olive oil.
Cook the peach slices for 2 minutes on each side.
Combine rocket, fetta, walnuts and blueberries in a salad bowl.
Pour dressing over the salad and enjoy.
