COCONUT & RASPBERRY JAM SLICE

INGREDIENTS

for 20 slices servings
120g butter
120g caster sugar
1 egg
90g plain flour
80g self raising flour
2 teaspoons vanilla bean paste
1 cup Raspberry jam (or jam of choice)
Coconut Topping
2 eggs, lightly beaten
110g caster sugar
100g desiccated coconut
100g shredded coconut

Preheat oven at 180 C (160 fan, 350F, Gas mark 4)

Line a 20cm x 30cm (8 x 12 inch) slice tin with baking paper

Using a stand mixer, beat butter and sugar until creamy and pale in colour

Add egg and vanilla and continue to beat until combined

Add sifted flours and stir until combinedSpread mixture into slice tin and smooth out evenlySpread jam over the top of the batterIn a separate bowl add eggs, sugar and both coconuts and mix well

Then spread coconut mixture over the top of the slice

Bake in oven for 35 minutes or until golden brown

Remove from oven and leave to cool in the tin

Once cooled remove from tin and cut into squares to serve

Store in an airtight container
