CREAMY CARROT & GINGER SOUP
Boost your immune system with a big pot of Creamy Carrot & Ginger Soup, serve warm with crusty bread!

1 brown onion, finely chopped
One piece of ginger, peeled, finely chopped
2 garlic cloves, finely chopped
6 carrots, peeled, chopped
4 cups chicken style liquid stock
Heat oil in a pot over medium heat. Add onion, ginger and garlic. Cook until onion is soft.
Add carrots, stock and 2 cups water. Simmer for 35 to 40 minutes or until carrots are very tender.
Using a food processor or blender, blend soup until a smooth consistency.
Ladle soup into bowls. Serve with warm crusty bread
