CREAMY CHICKEN BAKE
The perfect dish for all weather!
for 6 servings
6 Chicken Drumsticks, Skin On
3 tbs Olive Oil
4 Garlic Cloves
1 Brown Onion
300g Bacon, Diced
500g Mushrooms, Sliced
1 cup Cream
2/3 cup Chicken Broth
1/2 cup Parmesan, Grated
3 tbs Chopped Parsley
Place chicken in a large bowl and coat in olive oil, parsley, salt and pepper. Massage until evenly coated.
Place a large oven proof pan on the stove, over medium heat and add a splash of olive oil. Add the chicken and sear until the skin is golden brown.
Move to the oven and cook for a further 30 minutes or until cooked through. Once finished, place the cooked chicken in a bowl and pour any juices into a heat-proof cup or jug.
In the same pan, cook the bacon and onion over medium heat until beginning to crisp, add mushrooms until softened.
Add broth, cream, half the juices from earlier and parmesan. Let simmer until thickened, stirring occasionally. add salt and pepper to taste.
Add chicken back into the pan and cook for 3 minutes. Serve and enjoy!
