CURRIED PORK KEBABS

Try this curried pork kebabs with flatbreads, minted yoghurt & mango lime salsa

PREPARATION TIME

35 -40 minutes

INGREDIENTS

for 4 servings
1kg pork shoulder, cut into 3cm chunks for skewering
1 small jar of preferred curry paste
Juice of 1 lemon
1 tsp sautéed shrimp paste
1 tsp salt
Enough garlic naan or roti bread for 4 people
1 cup natural/Greek yoghurt
1 clove of garlic, minced
1 large handful of mint leaves, finely shredded
4 cheeks of mango, diced
The zest and the juice of 1 lime
Sliced cucumber to serve

PREPARATION

Marinade the pork in the curry paste, lemon juice, shrimp paste, yoghurt and salt. Leave for at least 2 hours (overnight is best).

For the minted yoghurt, combine yoghurt, garlic, mint & salt in a bowl. Adjust salt to taste.

For the salsa, combine the mango, lime juice and zest into a bowl.

Thread marinated pork onto skewers and BBQ or griddle for 25-35 mins, turning often, until pork is cooked through.

Serve skewers with yoghurt, salsa and warmed through flat breads.
