CURRIED SAUSAGES & RICE
Easy and healthy curried sausages & rice recipe for a quick weekday dinner.
for 4 servings
300gms cooked rice
6-8 beef, pork or lamb sausages, sliced
2 tablespoons vegetable oil
1 small onion, diced
1/2 medium green capsicum, diced
¼ cup peas
1 tablespoon Curry Powder
2 cloves garlic, minced
1 tablespoon hot pepper sauce
2 green onions, thinly sliced
Heat oil in a large saute pan. Add onion, pepper, peas and celery. Saute until onions are soft and brown.
Add in garlic and sausages with vegetables and cook until sausage has browned.
Add rice, curry powder, half the green onions, and hot pepper sauce.
Mix well and serve, garnishing with chopped coriander.
