Easy Chilli Con Carne

Method

  1. Heat a large pan over medium heat, add a splash of oil and sauté onion until softened.
  2. Add the beef mince to the pan with the onion and cook until browned, breaking it up with a spoon as it cooks.
  3. Add the seasoning mix, tomatoes, kidney beans, corn kernels, sweet potato and water to the pan, following the instructions on the packet. Stir well.
  4. Simmer on low heat for about 25 minutes, stirring occasionally.
  5. While the chilli simmers, prepare your toppings.
  6. Layer rice into bowls with a generous spoonful of chilli con carne. Top with cheese, a dollop of sour cream, avocado, lime and coriander. Serve with a side of corn chips for added crunch.

Ingredients

  • 500g beef mince

  • 1 large onion finely chopped

  • 1 x packet Continental Chilli Con Carne seasoning mix
  • 1 x 400g can chopped tomatoes

  • 1 x 400g can kidney beans

  • 1 cup frozen corn kernels

  • 1 medium sweet potato diced

  • 1/4 cup of water

  • 1 cup sour cream

  • 1 avocado diced

  • 1 cup grated cheddar cheese

  • Corn chips, to serve

  • 2 cups of cooked brown rice

  • 1 lime cut into quarters

  • Handful of coriander for garnish

  • Replace beef mince with 300g plant-based mince to create a vegetarian option
