Easy Chilli Con Carne
An easy weeknight meal that the whole family will enjoy.

- Heat a large pan over medium heat, add a splash of oil and sauté onion until softened.
- Add the beef mince to the pan with the onion and cook until browned, breaking it up with a spoon as it cooks.
- Add the seasoning mix, tomatoes, kidney beans, corn kernels, sweet potato and water to the pan, following the instructions on the packet. Stir well.
- Simmer on low heat for about 25 minutes, stirring occasionally.
- While the chilli simmers, prepare your toppings.
- Layer rice into bowls with a generous spoonful of chilli con carne. Top with cheese, a dollop of sour cream, avocado, lime and coriander. Serve with a side of corn chips for added crunch.

500g beef mince
1 large onion finely chopped
- 1 x packet Continental Chilli Con Carne seasoning mix
1 x 400g can chopped tomatoes
1 x 400g can kidney beans
1 cup frozen corn kernels
1 medium sweet potato diced
1/4 cup of water
1 cup sour cream
1 avocado diced
1 cup grated cheddar cheese
Corn chips, to serve
2 cups of cooked brown rice
1 lime cut into quarters
Handful of coriander for garnish
