FIBRE FEST PENNE WITH MIXED GREENS & BASIL PESTO
Try this Fibre fest penne pasta with pesto for your weeknight dinner. It is filled with flavour and nutrients & takes minutes.
for 2 servings
San Remo Fibre Fest Penne 250g
1/2 cup olive oil
3 garlic clove, finely chopped
150g green beans, tops removed and sliced into 3cm lengths
4 asparagus spears, cut into 3 cm lengths
1/2 bunch broccolini, roughly chopped
300g baby spinach
Salt and pepper, to taste
Basil leaves, to garnish
1/4 cup pine nuts
3 cups basil leaves
1/4 cup grated Parmesan
To make pesto, add garlic, salt, pine nuts and basil into a food processor to form a rough paste. Add Parmesan to combine.
Place pesto into a small bowl and stir through olive oil (1/2 cup). Set aside.
Into a pot of boiling salted water, add the pasta and cook as per packet directions retaining a small cup of the pasta water.
Heat a large frypan over medium heat. Add 1 tbsp olive oil, 1 chopped garlic and cook for 1 minute.
Add green beans, asparagus, broccolini and cook until softened.
Add cooked pasta and spinach to the pan and toss well to combine.
Season with salt and pepper, adding a splash of pasta cooking water to create a sauce.
Serve pasta topped with a spoonful of pesto and garnish of basil.
