FISH CURRY WITH COCONUT & LEMONGRASS

INGREDIENTS

for 4 servings
4 white fish fillets (about 180gm each)
1-tablespoon vegetable oil
1cup of chopped spring onion
1 lemongrass stem, white part only halved
2-tablespoons green curry paste
1 large garlic clove sliced finely
1 400 ml can coconut milk
½ cup of water
1-teaspoon fish sauce
1 tablespoon grated palm sugar
1 red chili (optional)
½ cup of coriander leaves

PREPARATION

Cut each fish fillet in to 4 pieces

Prepare 4 servings of rice

In a heavy based pot fry onion with vegetable oil, lemongrass, garlic, curry paste and red chili, if using

After 4 minutes add coconut milk, water, fish sauce and palm sugar

Bring to the boil and drop in pieces of fish

Reduce heat and simmer covered for 8 minutes

Remove from heat and allow to sit for a couple of minutes

Serve with boiled rice and fresh coriander
