HOMEMADE LAMB KOFTAS

Traditional skewer style Lamb Koftas, serve warm with toasted pita & a fresh salad

INGREDIENTS

for 8 servings
1kg lamb mince
1 small brown onion, chopped
2 garlic cloves, crushed
1/2 tsp chilli flakes
1 tbsp chopped fresh mint leaves
1 tbsp chopped fresh flat-leaf parsley leaves
2 tsp mild paprika
1/2 tsp ground ginger
2 tsp ground cumin
1 tsp ground coriander

PREPARATION

Place mince, onion, garlic, chilli flakes, mint, parsley, paprika, ginger, cumin and coriander in a bowl. Mix to combine.

Shape 1/4 cup lamb mixture at a time into sausages. Thread sausages onto each skewer. Place on a large baking tray and cover. Refrigerate for 20 minutes or until firm.

Place pan on heat. Add koftas. Reduce heat to low. Cook for 10 minutes or until cooked through. Transfer to a large baking tray. Cover with foil. Rest for 5 minutes. Serve.
