ITALIAN SAUSAGE CASSEROLE

A hearty casserole with a rich red meaty sauce, fast to prepare, beautiful to eat.

INGREDIENTS

for 6 servings
1kg Italian pork sausages (chopped in to 3cm pieces)
2 tbsp olive oil
1 onion, sliced
2 cloves garlic, crushed
½ lemon (zest only)
1 tbsp plain flour
1 ½ cups beef stock
1 tbsp dried oregano
850gm tinned tomatoes
2 red capsicums, cut in to strips
1 cup instant polenta
1 litre of water
1 cup of milk
1 tsp salt
2 tbsp grated parmesan
1 tbsp butter

PREPARATION

Preheat the oven to 150ºC

Heat the oil in a 4 litre flameproof casserole dish, add the sausage, onion and garlic, and cook over medium heat for 8 minutes, or until the onion is soft

Sprinkle the flour over the top and stir well

Add the beef stock, lemon zest, oregano, tinned tomatoes and capsicum

Season and simmer for 10 minutes, then bake, covered, for 1 hour

Bring the water, salt and milk to the boil in a large saucepan

Gradually add the polenta in a steady stream and stir constantly for 3-5 minutes, being careful of the mixture as it boils and splatters, until mixture is thick and creamy

Stir through the parmesan and serve immediately with casserole
