LEMON & COCONUT SLICE

INGREDIENTS

for 16 servings
2/3 cup Sweetened Condensed Milk
120g Butter
300g Granita Biscuits
1 cup Desiccated Coconut
1 Lemon, rind finely grated
Lemon icing ingredients
2 cups Icing Sugar Mixture
40g un salted Butter, softened
1 lemon, juiced
1 cup Shredded Coconut

PREPARATION

Line a dish with the approximate dimensions of 20cm by 20cm with baking paper

Heat condensed milk and butter in a small saucepan, stirring regularly, until butter has melted and combined

Blend biscuits in a food processor into fine crumbs

Combine crumbs, coconut and lemon rind in a bowl

Add warm butter mixture

Stir until well combined

Press biscuit mixture into prepared pan and flatten the top

Make lemon icing by placing icing sugar mixture, butter and 2 1/2 tablespoons lemon juice in a bowl

Beat with a wooden spoon until smooth

Spread icing over slice and top with shredded coconut

Refrigerate for 1 hour
