LENTIL SPAGHETTI BOLOGNESE
Go vegetarian with this delicious Lentil Spaghetti Bolognese
for 4 servings
1 onion, chopped
3 garlic cloves, chopped
1 jar (around 450g) tomato pasta sauce of your choice
500g can lentils, rinsed
Coriander to serve
2 carrots, grated
Cook the spaghetti in a pot of boiling salted water according to packet instructions.
Meanwhile, heat oil in a pan over heat and cook onion and garlic for until softened. Add tomato pasta sauce and 1/2 cup water and bring to a simmer. Add lentils and carrot, season and cook for a for a few minutes.
Drain pasta and toss with the sauce. Divide among bowls and serve with vegetarian cheese and coriander.
