The Traditional moon cake recipe to enjoy the Mid-autumn Festival with friends and Family.
for 8 to 10 servings
450g Self-raising flour
1 tsp Baking Powder
1/2 cup of sugar
2 extra large eggs
6 tablespoons melted butter
100g Red Bean Paste
5 Tea biscuits
1/2 cup Walnuts
1 large pear
2 cups apples, quartered
5 tbsp Honey
Boil apples and pears. Then mash them up.
Add Red Bean Paste, crushed Tea Biscuits, Walnuts, honey, and mashed fruits into a bowl. Mix up Well to make a filling. Take a small portion and roll them up into a ball.
To make a Dough, add Flour, milk and baking powder together in a bowl.
Beat sugar and eggs together until creamy and white. Add melted butter.
Roll out dough to circles. Place a portion of filling in the centre and bring up the sides to encase it completely. Pinch cracks to seal and roll between your hands to make a ball.
Lightly flour the mould and press the dough ball into it, flattening it with the palm of your hand. Shake to tip out.
Preheat oven to 180 degrees Celsius.. Place them on a baking sheet, brush tops with egg yolk, and bake for 25- 30 mins.
Serve warm or cold with Tea.
