Naan Bread is the perfect light snack.
for 3-4 servings
4 pack of Naan
1 cup tzatziki
zucchini, sliced in to ribbons
1 bunch asparagus, blanched, cut in to thirds
50 grams feta
1 lemon, juices
1/2 cup extra virgin olive oil
handful of mint
salt and pepper to taste
In a large bowl combine, olive oil, lemon juice, zucchini ribbons, asparagus and feta. Season. Set aside.
In a large fry pan, warm through the naan bread.
Once warm, spread tzatziki over all the naan, place a generous handful of the zucchini mixture on top.
Sprinkle with mint, chilli flakes, and season to taste.
