Delicious, creamy, & crunchy plum crumble!
for 6 servings
10 small plums
1/3 cup caster sugar
1/2 cup brown sugar
1/2 cup plain flour
1/2 cup desiccated coconut
75 gram unsalted butter
Preheat oven to 180°C. Halve the plums; remove stones. Slice the plums; place in a large bowl. Add the caster sugar and toss until the plums are well coated. Stand for 10 minutes.
For the crumble: combine brown sugar, flour and coconut in a bowl; rub in the butter.
Stir the plums again to ensure they are well coated, then spoon into baking dish. Top the plums with the crumble mixture and place in the oven. Bake for about 30 minutes or until golden and the juices are bubbling over the side.
Serve the crumble hot with cream or ice cream.
