POTATO ROSTI

The perfect golden potato rosti!

INGREDIENTS

for 4 servings
4 Waxy Potatoes
1/3 tsp Baking Powder
1 Egg
1 tsp Plain Flour
1 Onion, Finely Diced
3 tbs Vegetable Oil
100g Prosciutto, Finely Sliced
50g Rocket
50g Parmesan, Shaved

PREPARATION

Peel and grate the potatoes. Squeeze any excess water out of the grated potato and place in a large bowl.

Combine egg, baking powder, onion, flour, parsley, salt and pepper with the grated potato.

In a large pan, heat 3 tbs vegetable oil over medium heat. Spoon the mixture into the pan making them as large as you like, flatten them into discs. Cook until crisp and golden brown.

Repeat step 3 with the remaining mixture. Top with prosciutto, rocket and shaved parmesan. Enjoy!
