PRAWN PASTA SALAD WITH NECTARINES

INGREDIENTS

for 4 servings
8 Raw Prawns (Skewered)
500g Spaghetti
1/4 cup Olive Oil
2 tbs Balsamic Vinegar (Preferably White Balsamic Vinegar)
1tsp Honey
2 Nectarines (Pitted and Cut into 8)
2 tsp Vegetable Oil
100g Spinach
1/4 Red Capsicum (Finely Diced)
1/2 cup Crushed Walnuts
1 tbs Basil (Finely Diced)

Cook pasta as directed by packet. Rinse and keep to the side.

To make the dressing, combine the olive oil, balsamic vinegar and honey. Dress the pasta to allow the flavours to combine.

Heat a skillet over medium heat and cook the nectarine pieces until golden brown. Take nectarines off heat and allow to cool.

While the skillet is still hot, add a splash of vegetable oil and prawns to the skillet and cook for 3-4 minutes or until the prawns are pink, flip prawns after 2 minutes.

Serve pasta on a bed of spinach, top with red capsicum, nectarines, prawns, basil and crushed walnuts. Enjoy!
