PULLED PORK BURGERS

Homemade pulled pork burgers with slaw

INGREDIENTS

for 8 servings
Olive oil
Pork Boneless Leg Roast, string removed
1 onion, sliced
3 garlic cloves, crushed
1 tbsp smoked paprika
1 can tomato puree
1/3 cup maple syrup
1 tbsp Dijon mustard
1 cup water
Coleslaw mix
Burger buns

Heat oil in a saucepan over medium-high heat. Cook pork until browned all over. Transfer to a bowl.

Add onion to pan and cook until starting to brown. Add garlic and paprika and cook for a further 30 seconds. Add tomato puree, maple syrup, mustard and water. Bring to a simmer. Return pork to pan. Reduce heat to low and cook covered for 2 hours or until pork is tender. Remove pork from pan. Shred meat and place in a bowl.

Place coleslaw on bun bases. Top with pork and bun tops to serve.
