Try this healthy, delicious and easy vegetable bowl recipe.
for 2-3 servings
Short grain or long-grain brown rice, rinsed
½ cup cherry tomatoes, halved
½ cup cucumber, diced
½ a tin of kidney beans
½ cup red capsicum, sliced
1 tin of canned corn
Red onion, sliced
1 ripe avocado, halved, pitted and thinly sliced into long strips
Handful of spinach
Bring a large pot of water to boil. Once the water is boiling, add the rice and continue boiling for 25 minutes.
Drain well, and place rice in bottom of the bowl.
Arrange tomatoes, cucumber slices, kidney beans, corn, red onion, capsicum and spinach along the edge of the bowl.
When you’re ready to serve, divide the avocado into the bowl. Lightly drizzle olive oil over the avocado, followed by a generous sprinkle of flaky sea salt. Serve promptly.
