Healthy and Delicious little spicy vegetable curry packed with flavours.
for 4 servings
1 tbsp vegetable oil
120g onion, diced
500g Mix vegetables
2 tbsp Garam Masala
1/2 tbsp Turmeric Powder
1 tbsp Red chilli Powder
50g canned chopped tomatoes
300ml water or vegetable stock
100ml single cream
1 tbsp fresh coriander leaves, chopped
200gm cooked rice
Heat the oil in a pan and saute the garlic paste. Add grated onion and cook it until light golden brown.
Add Garam Masala, salt and stir it for a few minutes.
Add the tomatoes, mix vegetables and water. Add turmeric powder, chilli powder and mix them well. Cover the pan and cook for about 15 minutes until vegetables are tender.
Stir in the cream and sprinkle some fresh chopped coriander leaves.
Serve with Roti or Naan bread. Serve this veggie curry over some steaming hot rice.
