VEGGIE BURGERS

Go meat-free with these delicious sweet potato Veggie Burgers, serve with a side of sweet potato chips

INGREDIENTS

for 6 servings
1 sweet potato, washed, peeled & sliced
1 and ½ dry chickpeas soaked overnight
1 onion, finely diced
2 garlic cloves, finely diced
1 tsp salt
1 tsp cayenne pepper
3 tsp cumin
1 tsp smoked paprika
handful of coriander, finely chopped
2 eggs
Olive oil

Pre-heat the oven to 200° C. Cut the sweet potato into quarters lengthwise, brush with olive oil and place in the oven for around 30 minutes or until tender.

Please chickpeas into a food processor/blender and blend to your preferred consistency. Transfer chickpeas into a large bowl and add the rest of the burger ingredients. Place the roasted sweet potato into the food processor and blend until a smooth consistency then add to the burger mix.

Form patties using your hands then place in the fridge for 30 minutes to firm up.

Heat a pan with olive oil. Fry each burger for around 4-5 minutes until golden on both sides. Place cooked burgers on a burger bun, add your desired ingredients. TIP: Guacamole is delicious with sweet potato burgers!
